Hashbrown Casserole

This is a delicious recipe from my friend Carla.  She gave it to me at my Pampered Bride shower, which my family hosted for me in North Carolina (where I grew up). I was living in Arizona, so they wanted to throw a shower to bless me but didn't want me to have to pack a bunch of things to take back home.  The PB shower was perfect!  I received all the "hostess" gifts (like a typical Pampered Chef party), people brought money so I could purchase PC items, and then I got all the credit if the guests purchased items for themselves.  After the shower, I placed my order and it was all shipped to me in Arizona!  My kitchen has been well stocked with Pampered Chef items from day one of our marriage. 

Without further ado...Hashbrown Casserole

2 lbs. frozen hash browns, thawed
1 stick margarine, melted
1 t. salt
1/4 t. pepper
1/2 c. chopped onion
1 can cream of chicken soup
16 oz. sour cream
2 c. grated sharp cheddar cheese

Mix all ingredients together. Bake for 1 hour at 350 degrees in a 9 x 13 dish.  When just about done, top casserole with crushed ritz crackers.

(I added chopped ham to make this a main dish for dinner!)
